process detail. Ngororero Fully Washed is a classic Rwandan-style washed process. The cherries are first floated to remove unripe and less dense fruit. They are then depulped and placed in cement tanks to ferment for 18 hours, loosening the mucilage. The coffee then moves to a sloped grading channel and is washed against the flow of water — both to remove all remaining mucilage and to grade the coffee by density. Only the top grade is selected and dried separately. This is our cleanest process, and the one that best showcases our terroir and varietal character.
